Those happen to be 2 of the things i make the most, at least in one form or another. In fact I just tossed back some tacos tonite, tho much different than those. Pulled pork (crock potted for 6 hrs) salted and crisped in a pan w/olive oil. Then wet and grill the tortillas on a griddle till brown spots on both sides. Then spread one side thick with guacamole i made from a fresh avacado, salt and garlic. Pile on the pork, top with shredded cheese and douse liberally (and dangerously) with habenero picante sauce. Damn tasty. By the way, if you never used habenero sauce try it. The stuff is the tastiest and least vinegary and processed tasting bottled hot sauce. Theres a few kinds at smart and final for anyone near that chain and the one i'm using now they just started stocking. It's cheaper than the one they've carried for years in a glass bottle and it's a better balance of taste/heat. Extra ounce and cheaper to boot. Plastic bottle. Really good stuff as long as you're ok with fairly serious heat.

Speaking of mex food, anyone know of any authentic and sorta secret spices they use to get those flavors in really good mex food? Not cumin and garlic or oregeno. Those don't do it. There are certain tastes that i know are from uncommon spices i can't find in google searches and i can't figure out what they are.

Daz, I remember a while ago you asked about Mex-recipes , I still haven't found one but the one thing I found is to use FRESH cilantro not dried. My last job I worked with a Mexican fellow who's wife did the cooking and the one thing I noticed they used fresh cilantro and the scent was un mistaking. AZ, those are some nice looking Tacos and if you're ever in Clarkdale,AZ. look up La Hacienda It's family owned and operated

I use cilantro. But what i'm talking about is spices that are used to season the meat or in sauces, refried beans, that kind of thing. Mostly in the meat itself. For example, if you look up carnitas online u will find several ways of making it but having tried them all nothing comes even close to the flavor of authentic carnitas. I have even tried using coca cola as some say to do. Oranges, all sorts of things but nothing has gotten me anywhere near that flavor.

Yeah, seems like they keep it under their hat like some restaurants etc. But thats impossible given every person on the planet that knows would have to be zipped.

Dave's Hacienda (down south) used to serve a killer burrito affectionately known as the "beached whale" covered with the best sauce ever. One of the spices he used was a dash of Cumin. Been looking for something similar ever since...

Coriander is the seed. The plant is both a herb and a spice.

The seed 'coriander' has a way different flavor than 'cilantro' the leafy part of the plant.

Try the seeds, very distinct flavor and aroma. Probably the food secret of Mexico you are looking for.

Finally got some corriander. It's nothing like what i was looking for. It seems to be a spice thats probably used in indian food maybe but not mexican. At least none i have had. What i'm looking for i taste in a lot of mexian food but it's impossible to explain a taste.

not sure what else to suggest. FWIW my wife, who is Mexican (and hates indian food) puts both coriander and cilantro in most dishes. lime juice gets used as well.

don't you live in California? formerly the Mexican state of Alta California. there must be some local source for the flavor or cooking technique you are looking for.

And if I am not mistaken coriander is the seed from cilantro. Cilantro's perfume is very potent
I know of people that can't stand the smell of it.
I do like authentic Mexican food its very satisfying
